Tea & Coffee 04/00 - Cupping Review: Wet-Processed Ethiopias
(#)
„Perhaps predictably, Yirgacheffes continued to rule the wet-processed Ethiopia roost, with a considerably higher collective rating than samples from other regions. However, only one Yirgacheffe, the entry from Royal Coffee, displayed quite the astounding high-toned aromatic fireworks of which this origin is capable. A second Yirgacheffe, this one from Holland Coffee, also was impressive, though a bit lower-toned and perhaps more seductive than the Royal Coffee sample. The other coffees in the cupping were fragrant and agreeable, but failed to deliver quite the perfumed thrill that professionals and aficionados always hope for when dropping their noses over a cup of this most distinctive and exotic of coffee origins.“http://www.teaandcoffee.net/0400/coffee.htm - Cached
„Only in the past few years have Organic and Fair Trade coffees come from Ethiopia, and all are from a single huge cooperative called the Oromia co-op. They represent many small farms in many regions, and while the regions are certainly kept distinct (Sidamo, Yirgacheffe, Etc) the individual farms are too small to sell each coffee as discrete lots. So some of these pooled co-op lots can be pretty good, and a few are excellent. It takes cupping to sort through all the offerings, and this year I found 2 lots that were really nice, one dry-processed coffee from Sidamo and one wet-processed coffee from Yirgacheffe (although both are totally different in the cup).“http://www.sweetmarias.com/ coffee.africa.ethiopia.html - Cached

„When asked his opinion of the current crop of Ethiopian coffees, Bauer was enthusiastic. “Ethiopia has some really good quality washed Yirgacheffe and washed Sidamo right now. And they continue to produce some of the finest coffees in the world.” This nation’s bizarre auction system, where exporters must bid on coffees before having had the opportunity to cup them, prevents the best farmers from getting the best prices, thus making any entrepreneurial effort on the part of any one farmer to improve the quality of his or her coffee pointless at best. Exporters, likewise, cannot focus on any particular style or quality, or even establish a reputation for offering even a particular price/value relationship vis-à-vis the coffee they offer.“http://www.teaandcoffee.net/0601/special.htm - Cached
Tea & Coffee 04/04 - Ethiopia Takes Control of Its Coffee

„Handing me a photograph of a member coffee-producing family in the Limu area, he said: “We represent 22,700 small holders, who are organized into 34 cooperatives. Because we bypass the auction we can sell directly and quickly to our clients.” Coffee from most regions is sold through the Union, including Yirgacheffe, Sidamo, Harrar, Limu, Jimma and Ghimbi/Lekempti. This system cuts out two types of middlemen in the process, and has won fair trade status for eight of its cooperatives by returning 70% of profits to the members of at least two buying stages. Their importing partners guarantee a fixed price.“http://www.teaandcoffee.net/0404/coffee.htm - Cached

„The other factor is that other decafs sometimes don't originate with the best green coffees. This is a true Auction Lot Kenya blended 50-50 with one of the best Ethiopian Yirgacheffe lots from this season. As I mentioned, it is a coffee that is lighter in body, bright (striking the front of the palate and tongue in the center-front and front-sides), and very fruity. Although the scores are already very high for a decaf, I objectively felt the cup rates higher than a combined 86 so there is a "Cupper's Correction" of 2.“http://www.sweetmarias.com/ coffee.reviewarchive.l-p.html - Cached

„Last week, after a slight delay, I got a super care package from my fellow SCAA Consumer Marketing Committee member Colleen Crosby of Santa Cruz Coffee Roasters in Cali: 2lbs of their roasted Ethiopian Yirgacheffe Organic Fair Trade coffee, and an unprecedented 5lbs of it green (note: they DO NOT sell green coffee, pls don't order any). The green was sent so we could do some private cupping for Colleen and ourselves (Aaron and I). Colleen also sent a very informative and sometimes sobering video that her company produced about the coffee crisis and what can be done.“http://www.coffeekid.com/cafetalk/08-29-2003 - Cached

„This was due to (in my opinion, not the industries) a poor Yirg crop that lacked the vibrancy I associate with it. I went to Sidamo (not bad, certainly better that 2002 crop Yirgacheffe), Djimma (a real mistake - it was a good cup, but the bean grade was very poor which meant 20 minutes before roasting were spent fishing out the pebbles). However nothing gives my espresso the lift it needs like a good Yirgacheffe. So now it's back, its good and it's in most of my blends for sure.“http://www.ineedcoffee.com/04/blending/ - Cached
„The commonly known Ethiopian producing regions are Harrar, which boasts an excellent premium coffee with balanced complexity; Sidamo, which produces an unusually sweet and robust coffee; Yirgacheffe, where the coffee is profoundly bright and acidic; Limu, known for coffee similar to Sidamo in cup quality; and Djimma, whose coffee is full-bodied and earthy. Of these origins, the washed coffees that are fermented are the cleanest and most desirable, although there is still a market for unwashed, sun-dried coffees.“http://www.freshcup.com/jul03_ethiopia.htm - Cached

„Notes: Limu is generally considered the second most prestigious origin for Ethiopia wet-processed coffee after Yirgacheffe. From the 1998/99 crop. Blind assessment: Panelist opinion was divided whether to call this Limu bland or (as one panelist put it) "comfortable." Most agreed that the aroma tended toward vanilla, berry, and chocolate, that the acidity was bright and sweet, and that the cup was agreeably sweet but underpowered, perhaps shadowed by slight vegetal tones.body and flavor develop nicely."“http://www.teaandcoffee.net/0400/coffee2.htm - Cached
„Notes: Basically, I cupped this specific washed Limmu against all otherYirgacheffe samples, and except for the particular lot of Horse Yirgacheffewe offer, it beat the others hands down. This Limmu will easily surpasswashed Sidamos, and our one broker even thinks it is better than the Yirgacheffewe sell...but I don't; there's just a tangerine peel twist to the acidityof the Yirg. that distinguishes it.“http://www.sweetmarias.com/ coffees.indo.afr.etc.html - Cached

„The medium roast allows the character of the coffee to emerge, in this case richly and sweetly acidy, complicated by sweet nut notes and, as the cup cools, more characteristic Yirgacheffe floral and lemon tones. An unusual coffee in two respects: light roasted in a region (San Francisco Bay Area) where extremely dark roasting prevails, and rather heavy bodied for a Yirgacheffe.“http://www.coffeereview.com/ allreviews.cfm?cupdate=%7bts%20'2002-09-24%2000:00:00'%7d - Cached

„A skilled roaster will know that every crop has a sweet spot; some beans are best when roasted lighter and some best when roasted dark. A Colombian may excel at a Vienna Roast, but roasting Ethiopian Yirgacheffe that dark is a crime. In actuality, there is no "one roast fits all" solution.“http://www.ineedcoffee.com/00/01/roaster/ - Cached

„While the Yirgacheffe Coffee may have sprung from , what was my impression, the spiciest and most nutrient rich dung heaps of Eastern Africa, the Zambian entry was downright sedate, almost sleepy in comparison. Unground and in the bag, the beans had a pleasing air of Nutmeg, Cinnamon and Molasses. This, to me, and as a light-roast, had a amusingly jangling acidity and a very surprising sweet cocoa milkiness.“http://www.coffeecrew.com/articles/.../ coffee-around-the-world....html - Cached
