„Degree of roast hasa particularly dramatic effect on the cup characteristics of Yemen Mocha.Its complexity and hard bean means its flavor profile develops rather thanfades at darker degrees of roast. Generally a darker style mutes YemenMocha's wild or gamey notes while mellowing the wine and fruit tones andturning them increasingly richer and more chocolatey. Both aroma and bodyintensify at somewhat advanced degrees of roast. Yemen Mocha will maintainindividuality even at concluding bean temperatures of 465 F (very darkbrown, SCAA Color Tile #35).“

„The dryness of the Sanani region's soil, like many other Yemeni growing areas, results in a very hard bean. Although irregular in color and shape and smallish in size, Mocha Sanani possesses a complex aromatic character somewhat understated compared to the Mattari, a quieter fragrant nose, an exceedingly clean taste when prepared in a drip carafe and overall, a very good, no great, cup of Java. I would rate this third of all the Africans that I sampled in terms of ease of drinkability without compromise or surprise.“
