„Bentz experimented with the idea of “filtering” the coffee grounds for a better quality coffee. She reasoned that by pouring water over the grounds and through a filter, there would be less chance for the grounds and bitter oils to get into the brewed coffee. After testing a variety of filters, she discovered that blotting paper taken from the school notebook of her older son, work very well. Cutting the paper into a disc, she paced it at the bottom of a perforated brass pot, measured in ground roasted filtered coffee – rich, full-bodied, without bitterness or ground – dripped out of the bottom.“
