Regarding that supply, both the planting and harvesting schedules chosen by coffee farmers will affect the availability of green beans in the marketplace. A tree planted by a farmer today will not yield a crop for another three to five years, so coffee growers have to be both agronomist and seer. It stands to reason that coffee growers want to plant only to the extent that their harvest will be a profitable one, so tracking the trends in coffee consumption as well as the global coffee yields become key considerations when deciding how much to plant.“

„But why are coffee prices in the supermarkets and cafes stable while world coffee prices fluctuate? Many of the expenses incurred - for example taxes, customs charges and wage costs to coffee roasters - are fixed. The fixed costs account for a large proportion of the price paid by consumers in the UK, while the fluctuating world price for coffee is but a small part of the total. In addition, the big coffee processors, like for example Kraft, Sara Lee, Procter & Gamble and Nestle, will hedge their risks using financial futures contracts, and this will stabilise the prices they pay for green coffee.“

„Of course there may be other reasons for the discrepancy between my ratings and the jury ratings: Some green coffees do not travel and store as well as others, for example, and by the time they reach the warehouses of the roasters some may have already faded or simplified in cup character, while others may have held steady or even improved. Finally, as an individual cupper with my own predilections I may tend to reward slightly different sensory characteristics than rewarded by the consensus of the cuppers on the juries. For example, I found the Nicaragua Los Delirios (rated 91.4 by the Nicaragua jury) an nicely acidy but slightly imbalanced cup, making it three points less appealing to me than the El Salvador Montecarlos Pacamara Peaberry (rated 89.6 by the El Salvador jury), with its softer, more integrated acidity and delicate aromatic complexity.“
