„The two Blue Mountain samples that came from a farm operated by a similarly obsessive (if charming) proprietor, Old Tavern Estate, elicited a quite respectable rating, one that would have placed these coffees among the leaders of the Kona cupping. It may be that things are going slightly wrong at the two mills that supplied the other two Blue Mountains in this month's cupping: the Wallenford and the Mavis Bank. The Wallenford sample tasted as though it had been scrubbed into lifelessness by aqua-pulping equipment; the Mavis Bank may have been tainted by minor sloppiness marring an otherwise sound traditional wet-processing.“

„Jamaican coffee is one of the most expensive coffees in the world and therefore can be disappointing.  The best estates are Wallenford, Mavis Bank, and Old Tavern.  Be wary of Blue Mountain coffees that do not list the estate name, do not say 100% Jamaica Blue Mountain, or sell for less than $50 per pound.  Since the coffee is so expensive it is best to try to find it green and roast it yourself since it frequently goes stale on the shelves.“

„We don't want to stand in the way of home roasting's great potential: it saves money and its exciting to try unusual varietals. Everyone caries Konas and Wallenford Estate Jamaica Blue Mountain, but they are not good values and they are not very exciting. We test roast every coffee to a City (Medium) roast or about an Agtron 50, and some we cup at 2 degrees of roast to underscore roast tastes and distinguish them from origin tastes. It's important to observe the differences between acidity and bittersweet created by the roast as they combine to produce or reduce complexity.“

„True Blue Mountain is an unusual coffee; it has good body, and some very interesting mild nutty flavors with herbal notes that remind me sometimes of chamomile, sometimes of spice. There are only 4 trade names that can legally call their product Blue Mountain coffee: Wallenford, Mavis Bank, Old Tavern and one other I can never remember. True Blue Mountain is actually grown at higher altitudes than most other island coffees, and much of Mavis Bank's farms are at 5000 feet. Nonetheless, it has the soft cup profile.“

After hours (which was cool), and ended up going home with about 25lbs worth of beans, INCLUDING 2 lbs of JBM Wallenford Estate, for under $160 Cdn (about $105USD). Not too shabby. I got a good variety, including some Colombian, some Brasil (rare for me), some Kenya AA (this year's crop kinda sucks.“
