„The wider the coffee basket you choose the more likely for channeling to occur due to differing densities in the packed coffee before brewing. Here at Vivace we have been using a 58mm basket, the widest available, and our efforts to control channeling through precise distribution have been extensive, with mixed success. The distribution technique has proved too precise for baristas under high volume pressure. „I often forget that there are people out there who love coffee, and love serving really good coffee to their customers. Sure, Dutch Brothers, Café Vivace and JJ Bean aren’t the vast multinational conglomerate that Starbucks is but that really is the point of the whole thing. „My only complaint is that Schomer doesn't even minimally discuss his techniques for producing rosettes on top of his lattes. „If you like Hines' espresso, I would also recommend the shots at Lighthouse Roasters in Fremont (everyone seems to overlook them), Vita (Capitol Hill), and Zoka in Greenlake (but $2.05 a shot !) „I think Stumptown and Vivace have novel approaches towards a cell phone "situation" but I really don't see a conundrum. I really don't care if a person is on their cell phone, or talking into an earpiece, while in line or in the cafe or whatever.
