Virtual Coffee - The Hottest Online Coffee Zine! (#)
„Peaberries (also caracol or caracolillo, "little snail" in Spanish) result when the coffee fruit develops a single oval bean rather than the usual pair of flat-sided beans. A half-hearted, vestigial crevice meanders down one side of the little egg-shaped beans. Botanists observe that peaberries develop when only one of two ovaries in the flower are pollinated or accept pollination, thus producing one seed rather than two - an only child, as it were, in a species in which twins are the norm. Since Arabica coffee is self-pollinating (the same flower can impregnate itself) excessive peaberry production is a sign of general infertility of the plant.“

„Caracol. Also known as Peaberry. A small, round bean formed when only one seed, rather than the usual two, develops at the heart of the coffee fruit. Peaberry beans are often separated from normal beans and sold as a distinct grade of a given coffee. Typically, but not always, they produce a brighter, more acidy, but lighter-bodied cup than normal beans from the same crop. “

„At this time, other Italians were busy trying to create new and better ways to brew coffee-using pressure rather than steam to extract the best from the coffee bean. But the high pressure-lower than boiling water solutions of companies like Gaggia were to take years of developing. These modern “true” espresso machines would remain fairly large and costly, using complex systems to attain their superior results. (For a history of the refinement of espresso see www.coffeekid.com/espresso/nirvana ) Italians were still used to the steam pressured “espresso” machines that dominated the coffeehouse scene and were, therefore, open to simpler solutions that would give them the same style coffee at home.“

„It is genetically different from other coffee species, having four sets of chromosomes rather than two. The fruits are oval and mature in 7 to 9 months; they usually contain two flat seeds (the coffee beans) - when only one bean develops it is called a peaberry. Arabica coffee is often susceptible to attack by pests and diseases, therefore resistance is a major goal of plant breeding programmes. Arabica coffee is grown throughout Latin America, in Central and East Africa, in India and to some extent in Indonesia.“

„The trick to roasting coffee is to bring the coffee along slowly rather than rushing it, by understanding what it's telling you and responding. We try to thoroughly roast the bean all the way through. If you crack open one of our beans, more often than not you'll see that it's darker on the inside than it is on the outside.“
