Virtual Coffee: Feature Articles ()

„Ah, to prepare an intoxicating cup of coffee (or tea, of course). Brewing methods are the means to enjoying our beguiling brews–the artistic side of Coffea arabica and Camellia sinensis. Certainly, we're all familiar with the craft of pulling shots from a gleaming espresso machine or dropping loose tea leaves into a decorative infuser, but remember: Brewing coffee and tea was an art in its own right far before the invention of espresso machines and fancy infusers. Take the Ethiopian coffee ceremony–a ritualistic ode to coffee born long before the idea of brewing coffee even entered into the consciousness of much of the world.“

„The coffee plant is a woody perennial evergreen that belongs to the Rubiaceae family.  Two main species are cultivated today.  Coffea arabica known as Arabica coffee accounts for 75-80% of the world's production.  Coffea canephora, known as Robusta coffee, is more resilient plant than the Arabica shrubs, but produces an inferior tasting beverage.  The coffee plant can grow to heights of 10 meters if not pruned, but producing countries maintain coffee at three meters to ease picking.  Each hectare of coffee produces 86 lbs of oxygen per day, which is about half the production of the same area in a rain forest.“

„Currently the only significant competitor among cultivated coffee species to Coffea arabica. Robusta produces about 30% of the world's coffee. It is a lower-growing, higher-bearing tree that produces full-bodied but bland coffee of inferior cup quality and higher caffeine content than Coffea arabica. It is used as a basis for blends of instant coffee, and for less expensive blends of preground commercial coffee.“
