„If you just tamp in the middle, the outside perimeter will still be loose,exaggerating the tendency for the water to flow between the basket and the coffee. Irecommend employing the "Staub Tamp" where you tamp the coffee four times riding the tamperup against the inside of the "North, South, East, and West" edge of the basket. Tamp with30-40 pounds of pressure (in training we tamp on a bathroom scale on the counter). Thisevenly compacts all of the coffee giving the water a uniform bed to percolate through.“

As you tamp the coffee you might simultaneously twist the tamper, which polishes the surface of the coffee and assists in creating a uniform resistance to the brewing water. If the coffee gushes out rather than dribbling, compensate by using a finer grind or by tamping the coffee more firmly.“

Probably the skill that is most important for making good coffee (assuming the grind adjustment is right) is the art of the tamp; the act of flattening and compressing the coffee in the portafilter basket before fastening the handle into the machine to brew. A qualified barista uses a hand tamper and leans significant body weight (about 30 to 40 pounds) into the basket on top of the counter. If you see the operator just barely flattening the top surface of the coffee, he or she is an amateur.“

First, you must grind the coffee just fine enough, and tamp it down in the filter basket just firmly and uniformly enough, so that the barrier of ground coffee resists the pressure of the hot water sufficiently to produce a slow dribble of dark, rich liquid.
