Tea & Coffee 06/01 - What’s Brewing In Specialty Retail? Tea & Coffee 06/01 - What’s Brewing In Specialty Retail?

„Allegro calls the growers of their coffee their “farming partners.” Kevin Knox, Allegro’s master roaster and green coffee buyer, believes that a close relationship between grower and distributor forms a sort of symbiosis, which directly relates to quality and integrity in the cup. This way, Allegro is closely involved in methods of growing and processing that affect the coffee, as well as the environment and the conditions of the workers. Many of the coffees are certified organically grown, and farmers are paid fair prices for what they grow.“

„Kevin Knox, green coffee buyer for Allegro Coffee Company felt reluctant to identify technological breakthroughs, but did mention one advance not yet covered here, the introduction of the “French Press” or “Melior” coffee maker. This coffee maker is the brewing method of choice by many in the specialty trade and has become a sort of talisman of product integrity and quality on the West Coast. Knox also broke the advancements in espresso into two discreet accomplishments, “the invention of the first pump driven espresso machine and the introduction of the first mass marketed espresso machines.” While not everyone believes that the proliferation of espresso based beverages has been good for specialty coffee, there is near unanimity that espresso changed the path of the specialty coffee business to a very great extent.“

„Another concern is expressed by Kevin Knox, vice president of Allegro Coffee, in an article in Tea & Coffee Trade Journal: "At origin, farmers are only going to grow coffee as good as it needs to be for intended use - if that use is dark roast in steamed milk, any sound hard bean or better coffee will do just fine. The nuances, subtle, multi-dimensional coffees…are truly an endangered species without a roasting and consumer audience."“

„I did have one key help - I had some amazing beans from the fellows down at Supreme Bean. Kevin, Jeff, and Phil are the guys behind this dynamo roasting company, and I highly recommend you seek them out if you want some amazing blends. They were, without a doubt, the class of the show. They don't have a website yet (hrmmmmm), but I'll attempt to get contact info for you.“

„Kevin later moved to Seattle where he joined Starbucks Coffee Company as Coffee Specialist. In this capacity, he evaluated coffees prior to purchase, established quality control standards, developed recipes and training procedures and evaluated brewing equipment. During his nine-year tenure, Starbucks grew from 12 stores to more than 160.“
