View topic - new roaster--cooler tray? - Coffee Forum (#)
„If I do 7# batches...do I need to also buy a cooler pan? I found a floor roaster at Diedrich's...don't really know what my demand will be. Also, in flavoring, do you spray the beans in the cooling tray or when do you do that? I have a million questions, my semionars don't start for a month!“

„There was a company that made these sprays that you spray on the filter and it would flavor the pot of coffee...it was the same stuff you put on the beans to flavor them...they only promoted it for a short time because there wasn't really a market for it. It is just easier and cheaper for the consumer to buy the coffee already flavored“

„Situate cookie sheets in relation to bean-charged pans so as to break up pattern of hot spots revealed by previous roast sessions. In other words, if beans in middle of roasting pan emerge darker than beans at sides, position cookie sheet directly below roasting pan. If darker beans are at back of pan, position cookie sheet somewhat farther back in oven than roasting pan, etc. If beans take longer than 15 minutes to reach a medium roast or 20 minutes to reach a moderately dark (espresso) roast, or if they taste bland or flat, start with higher temperature on subsequent sessions.“

„There are a couple of companies out there that sell flavoring for coffee beans....I don't think it will be to your advantage to buy from them because you have to buy a minimum of 7.5lbs of one flavor..(adds up to about a gallon of syrup..)Price ranges from $12.00 a pound and up... You could probably use vanilla extract but I don't know how it would taste... Most flavoring is 3% w/w (weight to weight) which is 1/2oz of flavoring to 1lb of coffee....“

„Flavored coffees are good but inexpensive coffees, roasted to a medium to medium-dark brown, and mixed with liquid flavoring agents that soak into the beans. The flavorings are a modified version of those used throughout the food industry. You occasionally may see actual bits of nuts, fruit, or spice mixed in with the beans, but these components merely dress up the mix and give it a natural look.“

„ The Bunn uses a wide spray of coffee and the flat bottom of the filter provides a greater contact of the water with the beans. The coffee is exceptional, far more extracted than any Braun, Krupps etc. I have owned. Also the coffee is made instantly and I love that in the morning.“
