„I've found that the coarser the grind, the more times water should be poured through to optimize taste. When I've gotten extremely finely ground coffee, one time works very well (and in fact doing it more than once clogs the filter). With the drip grind coffee I'm currently using (Jim's Organic Coffee), I pour water in 2 times when I use 4-5 tablespoons of grounds - about 1½ - 2 ounces the first time, then 6 - 8 ounces. When I make coffee with 2 tablespoons or a little more grounds, I run water through 3 times - 1 - 2 teaspoons first, then 1 - 1½ ounces then 2 - 2½ ounces.“

„Remove all the old coffee from your grinder, wash the hopper, dry it, and then pour in the coffee. Grinding a little coffee to season the burrs and freshen the grind hopper is another necessary sacrificial step. It also provides a good opportunity to check the grind. Making The World's Best Cappuccino requires you to employ the leveling method for measuring to distribute the dose of coffee into the filter basket evenly, so grind just enough to fill a double filter.“

„Grinding should always be done moments before brewing as it creates a greater surface area thus speeding up oxidation. My experience is that french press requires a coarser grind than conventional brewing, as I once created a pot of muddy mess by finely grinding the beans.“

„Find a coffee you like the smell of. I'd recommend first grinding it very fine (espresso or Turkish), then make it using a manual drip cone and pour the water in all at once (with finely ground coffee, if you don't pour it in all at once, it will clog the filter). Use 4 tablespoons of grounds and 8 - 12 ounces of water.“

„All home baristas should be trained on their own equipment to understand how togrind coffee beans properly (how and when to make the grind finer or coarser asdaily conditions vary), how much ground coffee to place in the portafilterbasket, and how to pack (tamp) it properly. Lastly, the trained home baristamust shut the water extraction off at the appropriate time for proper taste. This means the "barista" must know how to "read" the espresso pour by speed, color and body.“
