„There are look-alike hand grinders that are cheaper but don't grind consistently enough to deliver good results in an espresso machine. Check Sweet Maria's at http://sweetmarias.com “

„It shouldclump, and mostly stick to your finger. I recommend buying a package ofLavazza Bar Espresso or such a coffee, so you can see correct grind (well, its abit coarse and requires a hard tamp, but it works great) and learn to useyour machine without dealing with this variable. Also notice the lightdegree of roast. Espresso is NOT a roast .“

„You will need a pump or piston driven espresso machine. At one time that meant buying a hand-pull piston machine , which are still beautiful objects and can still make great espresso! The good news is that electric pump-driven equipment capable of making really good espresso at home is now widely available, starting at about $230 or so (see the Gaggia Espresso ). The machine is part of the equation, the coffee is another, and the machine-operator, the Barrista, is also key!“

„There's a lot of ways to achieve great espresso. Its fun to experiment and I don't know if there is some terminal point where you achieve the perfect trans-subjective espresso. These recommendations reflect my biases, of course.“

„To extract espresso properly it is essential to use a burr grinder and to grind per order. The two major types of burrs used are flat and conical. Conical burrs are desirable because they increase the surface area of each particle and the amount of flavor that can be extracted from the coffee. Since conical burrs have longer cutting edges, the burrs can rotate at lower speeds which reduces the heat created. Flat burrs should be replaced after 600 pounds of coffee have been ground and conical burrs should be replaced after 2000 pounds of coffee have been ground.“
