„After all, if what we see floating on top of the demitasse is crema, that is the essence of the espresso extraction. That is the symbol of a great extraction and a good coffee. That is what we are all trying to achieve, is it not? A good question deserves a good answer.“

„Anyone who tells you that a good shot can be built without crema is fooling themselves. Crema is one of the primary indicators of a good espresso shot. This isn't to say that every shot with crema on it is good - far from it. But I am saying that every shot that doesn't have crema on it is a bad shot.“

„Even when it didn't clog, while the shots produced had a nice looking head of crema, there was still less crema than what my Krups makes and therefore the shots were less flavorful. The Capresso support staff indicated to me that the clogging problem is due to the use of oily coffee beans, and instructed me to set the grind to the coarsest setting and to stir the beans during the grinding process. If you ask me, this greatly defeats the purpose of a machine that's supposed to be largely automatic, and the coarse grind may have accounted for the decreased strength of the shot. Anything but the coarsest setting would result in frequent clogging.“
