„Studies have shown that biodiversity thrives in this shaded environment. Recently, newer, heavier yielding coffee plants have been introduced in many areas that require full sun and significant amounts of agrochemicals. Unfortunately, the planting of full sun varieties usually requires the removal of shade trees, which has dramatically reduced habitat for birds and other wildlife. According to researchers from the Smithsonian Migratory Bird Program, studies in Colombia and Mexico found 94-97% fewer bird species in sun grown coffee than in shade grown coffee.“

„TransFair USA is part of a world-wide movement that offers consumers the choice of buying chocolate with the 'fair trade' label. "Whenever consumers see this label, 'fair trade certified,'" says Opal, "they know that a third party made sure that the farmers got a fair price, the importers paid a fair price, all the way to the end consumer."“

„Whenever possible we need to source our foods locally - directly from the farmers who work the land. Fair Trade lets us have the closest possible connection with farmers of coffee, tea, chocolate, and tropical fruits that are grown in developing countries," said Dan Barber, Chef and Owner of Blue Hill Restaurant in New York.“
