Tips on Coffee - The Coffee Book: Anatomy of an Industry from Crop to the Last Drop (#)
„Jammed full of facts, figures, cartoons, and commentary, The Coffee Book covers coffee from its first use in Ethiopia in the 6th century A.D. to the dramatic rise of Starbucks and other specialty retailers in the 1990s. Written with verve and filled with little-known facts, the book explores the process of cultivation, harvesting, and roasting from bean to cup; surveys the social history of caf society from the first coffeehouses in Constantinople to Renaissance French cafs to beatnik havens in Berkeley and Greenwich Village; and tells the dramatic story of international trade and speculation for a product that can make or break entire national economies. The book also examines the industry's major players -- General Foods, Nestl, Proctor & Gamble -- revealing how they have systematically reduced the quality of the bean and turned a much-loved product into a lifestyle.“

„Nevertheless, I would argue Starbucks deserves considerable credit for its efforts to preserve and excel in that tiny, tiny part of its business still devoted to specialty whole bean coffee. After all, Starbucks is a corporation that long ago could have turned itself entirely into a chain of coffee flavored malt shops for grown-ups, probably without losing a nickel for its stockholders. But someone at headquarters appears determined to keep plugging along with specialty whole bean coffee in the face of a customer base made up largely (it would seem) of herds of latte lappers and straw-sucking frappuccino lovers.“

„He takes us from the discovery of the bean in the hills of Ethiopia all the way to the despicable excesses of Starbucks. The first few chapters of this book take us on a jaunty trip through coffee's early history, including the ruthless and colorful European traders who were responsible for introducing the Western world to the bizarre beverage. Pendergast, a businessman by education, then settles into a wonderfully readable economic history. The structure of the material centers on the companies and international agreements that make up the international coffee system.“

„"Both SBC and TI offer superb specialty coffees that are distinct from Starbucks flavor profiles. These brands will allow us to satisfy the desires of consumers with an affinity for the smooth flavors of SBC coffees and distinctive Italian recipes of Torrefazione Italia coffees, while focusing on expanding the demand for these types of specialty coffees."“

„To me this is a latte made with the appropriate portion of milk - not the weak and dilute excuse for a latte made popular by Starbucks. Should be ideally a 1.5 oz ristretto with about 4.5 oz microfoamed milk in a 6 oz cappa cup. As it turns out... I've been drinking flat whites all along and just never knew it“
