Like Maragogype it is a large bean arabica varietal and these are very big and potently bright, I know in beer they talk about ''hop-heads'' and in wine there is ''dry'' but in coffee there are legions of people who feel that brightness IS the flavor of coffee and eschew the low-acid coffees that completely miss the front of your palate. These are the Kenya people (who should be thrilled this year with the quality of the crop) and the Costa Rican folks. Well, they need to get hip to the Pacamara.“

„Monsoon Malabar is a unique coffee grown at 1,000 to 2,000 meters above sea level. It is a significantly larger arabica bean named for the region and its rainy season which contributes to the beans' higher moisture content. To create a "monsooned" crop, the green coffee is warehoused in an open structure protected from rain while moist tropical air blows through the storage area. In a 2 to 3 month period, the beans absorb moisture, losing a degree of natural acidity and at roast time, a richer yet mellower beverage results.“

„For all Canadian "coffee nuts", I would like to know if anyone is using coffee beans from SECOND CUP coffee store? I use an Arabica bean that they have called "PARADISO" (black & brown beans), and I find it quite good. It seems to be the right amount of caffeine for me.“

„illy carefully roasts its coffee to the optimum level to bring out all the flavors inherent in the bean. illycaffè purchases only Arabica beans for its blend and sorts the beans using electronic instruments which evaluate the color and automatically reject beans that are either too green or overripe. About 50 coffee beans are needed to produce one cup of espresso, and only one bad bean can ruin its flavor. In order to better balance the aroma, illycaffè prepares the blend from nine different lots of Arabica before roasting and uses an air cooling system versus the more common water cooling system.“
