  „Of course, there's also the premium Sumatras, the Triple Pick's and Super-Preps. These are coffees that have gone through extra passes at the hand-sorting tables to remove defective seeds. It's risky because the coffee ends up costing a bit more, and it is possible to "over-prepare" a Sumatra, to "prep" the character right out of the cup. But you can also create a stellar coffee, a butterscotch roast taste, exotic spiced fruit flavors, and the coffee can be roasted lighter than other Sumatras to underscore these qualities.“

  „Many improvements need to be made in the coffee market to make it a more equitable place for coffee producers. There is a lot of talk in the trade about trying to free Specialty Coffee --the top 5% of coffee grades and the quality of coffee that we deal with -- from the tyranny of the New York "C" market that determines the base trading price for even some of the fanciest coffees available. The "C" is intended for commercial grade coffees. (I keep a few novelty samples of these around the so people can see the atrocious quality that trades at those levels).“

  Specialty coffee is where the wine industry was 10-15 years ago., that is to say that, much like wine, coffee consumption is suddenly declining on a per capita basis. In fact, coffee is down roughly half from where it was in the early 60s. We see the same trend in the wine industry, people are drinking less but drinking better.“

  „The first ever auctions for Panama coffees was held in May and Sweet Maria’s purchased two lots of the 8 winning coffees, including the #1 ranked coffee from Finca Lerida. While some of the farms that were awarded the top 8 spots and inclusion in the auction might be familiar, these specific coffee lots represented the best coffee from the best farms. They were picked and processed beyond the highest standards to compete against the many Panamanian farms that entered the competition. Sweet Maria’s paid the record price for the winning lot, the highest in the auction.“
