„Many people have discussed this as an insurance policy for farmers, and since the actual premiums for cup quality will remain, as they do now, we wouldn’t be doing harm to the great cup we love while insuring a decent existence for those who make it all possible. We also are Fair Trade certified by Transfair, we buy Auction Lot coffees and market-independent coffees (the vast majority of our offerings fall into this category), and we donate on a per Lb. basis back to organizations like Coffee Kids, Doctors Without Borders, and the International Red Cross.“

„To address this gap between to simplicity of roasting and the enormous complexity of coffee from origin to cup, there are two philosophies you might see expressed at local roasting shops in your area. On one hand there is The Stylist, a roaster who considers green coffee as an ingredient that will be transformed by the alchemy of their roaster. The Stylist will be more interested in blending that straight, single-origin roasts, and will emphasize their technique and their chosen degree of roast as a personal signature of their craft.“

„Because the origin is the brand, it’s the name these small farmers depend upon to allow their coffee to reach a market like the US. In the case of canned coffee, their brand name is key and they can switch the blend at any time to ensure the absolute lowest cost of production possible. And that can never work in favor of the small farmer.“

„Blending for Branding: Another reason to blend is to create a proprietary or signature blend that leads consumers to equate a particular coffee profile with a particular brand image. Consumers don't often call Starbucks by the origin names used in the coffee but simply as "a cup of Starbucks." It is as if the dark carbony roast tastes were somehow exclusive to that brand. So blends inherently refer to the place where the coffee was bought, and create allegiance to the retail source rather than creating awareness of the true flavor-origins: the farm, the region, the cultivar, the soil, the altitude, the hard work of the farmer, etc.“

„The bottom line is that the Chianti Classico 2000 project is looking to the future. To compete they must improve the quality of their product ; they must integrate the most up-to-date information available throughout its zone; and it must produce more typified and distinct products than ever before which nobody else can duplicate. This kind of research can easily be translated into the coffee industry in the most famous and quality oriented regions, and it is a necessity if the industry is going to meet the demands of the future.“
