„Many improvements need to be made in the coffee market to make it a more equitable place for coffee producers. There is a lot of talk in the trade about trying to free Specialty Coffee --the top 5% of coffee grades and the quality of coffee that we deal with -- from the tyranny of the New York "C" market that determines the base trading price for even some of the fanciest coffees available. The "C" is intended for commercial grade coffees. (I keep a few novelty samples of these around the so people can see the atrocious quality that trades at those levels).“

„To address this gap between to simplicity of roasting and the enormous complexity of coffee from origin to cup, there are two philosophies you might see expressed at local roasting shops in your area. On one hand there is The Stylist, a roaster who considers green coffee as an ingredient that will be transformed by the alchemy of their roaster. The Stylist will be more interested in blending that straight, single-origin roasts, and will emphasize their technique and their chosen degree of roast as a personal signature of their craft.“

„Blending for Branding: Another reason to blend is to create a proprietary or signature blend that leads consumers to equate a particular coffee profile with a particular brand image. Consumers don't often call Starbucks by the origin names used in the coffee but simply as "a cup of Starbucks." It is as if the dark carbony roast tastes were somehow exclusive to that brand. So blends inherently refer to the place where the coffee was bought, and create allegiance to the retail source rather than creating awareness of the true flavor-origins: the farm, the region, the cultivar, the soil, the altitude, the hard work of the farmer, etc.“
