„Ethiopian coffees can vary greatly from lot to lot. It takes A LOT of cupping to find the specific lot of coffee that is superior. MAO Horse imports a lot of coffee, but each year one specific "chop" (lot number) out-cups the others. Since lots differ in character, and I do so much to find the best lot, we are now listing the Lot Number in the description of the coffee.“

„For drip coffee I would suggest experimenting with Guatemalan, Costa Rican, Tanzania peaberry, Ethiopian (the Ethiopians are ALL good: Harar, Sidamo, and Yirgacheffe). Also you may like to try Sulawesi, Kenya and maybe even an exotic like Kona or Jamaican Blue Mountain (it's terribly expensive but also a unique coffee).“

„They are also a bit cheaper than Yemen Mochas. Of the ten blends in the cupping, three used a Harrar, six used a Yemen Mocha, while one introduced a Yirgacheffe, a wet-processed Ethiopian coffee with an entirely different profile from either Harrars or Yemens. Of the three blends that used a Harrar I considered one particularly successful (score of 80 or higher), and of the six that used a Yemen I assigned two a score of 80 or higher. The Yemen success rate may in fact be better than two of six, since a couple of the lower-rated Yemen-using blends raised flavor issues that were more related to roast than to green coffee identity.“
