„A general hopelessness has become the norm, as the market has had its way and proven that what it wants from Mexico is cheap, bulk lots of coffee for blends and flavoring. Perhaps this is why the Organic and Fair Trade certification processes have taken hold here. And we definitely support these initiatives, but something is still missing, and many of the certified coffees are simply not good in the cup. The cooperatives have grown very large, and their ability (or desire) to make cup quality the top priority is flagging.“

„There are a couple of companies out there that sell flavoring for coffee beans....I don't think it will be to your advantage to buy from them because you have to buy a minimum of 7.5lbs of one flavor..(adds up to about a gallon of syrup..)Price ranges from $12.00 a pound and up... You could probably use vanilla extract but I don't know how it would taste... Most flavoring is 3% w/w (weight to weight) which is 1/2oz of flavoring to 1lb of coffee....“

„I still do not understand how you flavor coffee after it is ground....when you brew coffee the coffee grounds stick together...add flavor(a liquid) it will do the same thing.“
