„While particular Costa Rican farms (fincas) receive an undue amount of attention, coffee drinkers are wise to remember there are 130,000 large and small farms The chance that any one will be the best from year to year is remote. The problem in Costa Rica is they have promoted a system where coffee is sold as "brands" developed by the mill (beneficio) rather than by distinct lots of coffee from particular farms. We evaluate every coffee by the cup quality, not the route to market .but I personally would like to see this beneficio "brand" notion abandoned.“

About 40% of Costa Rican coffee now goes through co-operatives, and the British party was interested to find how hard the co-ops were working to change the individual farmer’s idea of what coffee could do. They are having some success, and their farmers are reasonably well off, and looking forward to the next internet auctions in May. Last year, the best coffee fetched $10.35 per pound, which had an encouraging effect on individual farmers.“

Most Costa Rican coffee comes from a hybrid called caturra and is characterized as bright and full bodied. Other popular varieties are Mondo Novo and Catuai. Altitude may be a more important factor in determining flavor than district; strictly hard bean indicates a Costa Rican coffee grown above 3,900 feet; good hard bean from 3,300 to 3,900.
