The Coffees of Brazil ()

„In brazil these are called CD coffees which means Cereja Descascada, or basically "Washed Cherry". I spoke with Joao who works at the farm and he tells me that the experiments with other process methods on the Brauna farm were just not a good match for this coffee in terms of cup results (and with their 10th place prize I am sure he is right). I use the Brauna as a small percentage of espresso blends .I don't want to use too much because this coffee is a bit brighter than other Brazils, and too much acidity in espresso can make a sourish tazze.“

„Brazil processes its coffee by the wet (washed), dry (natural), and semi-washed (pulped natural) methods. The vast majority of coffees are still processed via the dry method since Brazil is one of the few countries in the world that has the appropriate weather to do so successfully. Due to Brazil's distinct dry and wet seasons, the flowering and cherry maturation is homogeneous. This allows Brazilians to harvest coffee via the strip picking method and/or mechanically.“

Coffee Pod Questions and Answers Coffee Pod Questions and Answers

„Back to top Is the SENSEO® coffee wet or dry roasted? The majority of the blend consists of a so-called wet roast, 'washed Arabica', where water was used to remove the bean from the coffee cherry. Back to top How are the SENSEO® coffee bags made to ensure freshness? The SENSEO® coffee packaging is made of plastic with a very thin layer of aluminum to provide a good barrier to oxygen. To keep the coffee aroma in the package for a longer period of time, the SENSEO® coffee pods are packed under nitrogen to remove the oxygen (packaged in a protective atmosphere). This process is, by the way, completely harmless for people's health, as nitrogen is the major component of the air we breathe.“
