„Recall that the heavy body and rich flavor of espresso coffee is achieved through pressure and resistance: pressure by the brewing water, and resistance to that pressure by a uniform layer of compressed, ground coffee. The hot water, under great pressure, does its best to push its way through the layer of ground coffee, but owing to the resistance of the finely-ground and highly-compressed coffee, it cannot succeed until it has saturated every grain of the coffee, extracting the coffee's entire flavor and perfume almost instantly, and delivering it intact into the cup. This perfectly poised opposition of pressure and resistance is at the heart of the espresso brewing system.“

„Espresso is several things at once. It is a unique method of brewing in which hot water is forced under pressure through tightly packed coffee, one or two servings at a time. It is a roast of coffee, darker brown than the traditional American roast but not extremely dark. In a larger sense, it is an entire approach to coffee cuisine, involving not only roast and brewing method, but grind and grinder, a technique of heating and frothing milk, and a traditional menu of drinks.“

Espresso reviews do not rate acidity (a largely negative characteristic in coffeesintended for espresso brewing), replacing it with an "In Milk" category, which reports on thegeneral impact of hot milk on the brewed espresso coffee: Does the coffee survive the impact ofmilk? If so, does it survive with some character and distinction? A brief report on performance inmilk can be found in the "Blind assessment" paragraph, where "small milk" means coffeeperformance when a serving of espresso is mixed with an equal amount of hot (not frothed) milkand "large milk" means performance when mixed with two parts hot milk.“
