„However, this Blue Mountain exhibited almost every characteristic of the great BlueMountains of years past: tremendous, ringingly deep dimension, perfect balance of sweetnessand acidity, and absolutely cleanly expressed fruit, a kind of essence of coffee fruit. I admit that Idid register a couple of missing elements: The body was excellent, but not quite as big andbouillon-like as the Platonic Blue Mountains of memory, plus a slight, slight astringency mayhave imbalanced the finish. But these are quibbles, occasioned more by my lust for BlueMountain perfection than by any failing of pleasure generated by that particular cup at thatparticular moment in time.“

„Also keep in mind that North-American coffee professionals tend to favor bold, big coffees alive with the dry sensation called acidity. Neither boldness nor intense acidity are virtues of Caribbean coffees, which, like most grown in areas subject to coastal weather, are at best full, fragrant and balanced rather than decisive and authoritative. Some of our panelists (by their own admission) are unable to muster much genuine enthusiasm for gentler coastal coffees from origins like Hawaii and the Caribbean. If we were to mount a panel of European cuppers, who historically have been much more partial to soft-profile, balanced coffees than Americans, we might see different results.“

„My own suspicion is that some of these blends rely too heavily on coffees like traditionally processed Sumatras or other coffee types that are low in acidity but often sharply musty or mildewed. The musty notes, handled right in a blend and coupled with sweetness in the coffee, can add depth, character, and a sort of spicy chocolate to espresso blends, but some of these blends appeared to express a little too much of the bitter side of these creatively musty components.“
