„The true Arabian Mocha, from North Yemen, is still grown as it probably was over a thousand years ago, on irrigated terraces clinging to the sides of semiarid mountains; water is directed through little rock-lined channels to the roots of the plants, which are shaded from the desert sun by rows of poplars. The beans are also processed as they have been for centuries; even the best grades (Mocha Extra) are natural coffees, dried with the fruit still attached to the beans. The dried husk is later removed by millstone or other primitive methods, which accounts for the rough, irregular look of the beans. „If you must store beans for longer than a month, you can freeze them (in an airtight, moisture-proof container). However, freezing (and especially the thawing and refreezing that can occur when taking the beans in and out of the freezer every day) increases the likelihood that moisture will creep into the porous bean and the quality of the coffee will deteriorate. In addition, the flavor "oils" (which are not really oils at all, but a mixture of soluble and insoluble elements) that form on the outside of the beans during roasting will flake off because extreme temperature changes deteriorate bean structure (similar to how sidewalks crack as a result of moisture seepage and temperature change or the undesirable taste that ice cream gets when it's thawed and refrozen). The problem with these coffees is you can never be too sure how long the beans sit in those chutes and, as you know, exposure to air is an enemy of freshly roasted coffee beans. However, the real technical breakthrough did not come until the turn of the century, when Ludwig Roselius decided to pre-treat the coffee beans with steam before bringing them into contact with the caffeine-removing solvent. Steaming swells the beans, increasing their surface area and making the caffeine easier to remove.
