„Coffee is over 99% water and it is important to consider the origin of your primary ingredient. For the most part, the average home brewer uses water straight out of the tap. Even if your tap water tastes fine, it may contain impurities that will cause the coffee to have a flat or dull taste. If you must use tap water, be sure to run it for several minutes so that the stale water which has been stagnant in the plumbing is flushed away.“

„The goal was to brew a strong cup of coffee very quickly. One coffee brewer actually took the shape of a train locomotive (see image) highlighting the connection between speed and power and the use of water boilers used for both modern travel and making “modern” coffee. In 1901 Luigi Bezzera filed his first patent for a large espresso machine. This machine, like the railroad locomotives, was a dazzling piece of equipment-loud, shining with brass fittings and manned with its own “train engineer”, the professional barista.“

„I enjoyed reading this book, not too complicated it just gets down to business without a lot of technical detail. It seemed to cover just about all of the details a first time brewer would need to brew up some very interesting drinks. One reviewer says it doesn't tell you where to get supplies, true but the book does give some idea and addresses can change with time anyway. Most of the ingredients and implements needed you'll find that you already have or can easily obtain at any time.“

„To brew a cup of coffee or tea, a K-Cup is placed in the brewer drawer and a button is pressed. Inside each K-Cup is a pure paper filter with the ideal grind and measure of Van Houtte coffee or Bigelow tea. It's sealed air-tight to keep light and moisture out, and freshness and aroma in. In less than a minute, the perfect cup of coffee or tea is ready to be served.“

„The pump, in effect, pushes the water through the mechanism and, of course, provides the necessary pressure to brew the espresso coffee. As we move up the food chain of coffee machines, the types of pumps start to vary a little. In many higher end machines the common pump is a volumetric one. I wonít go into too many extra details on the properties of the volumetric pump.“

„The bottom line is; you do not want the flow of coffee(espresso) to be so quick nor do you want it to be too slow. In a perfect brew cycle, you want to draw 1 to 3 fluid ounces of espresso coffee from the machine into your espresso cup within about 25 seconds after pressing the brew switch on. If 3 fluid ounces of espresso coffee blasts into your cup in 3 seconds then the coffee is either too coarse or it is not tamped hard enough. The coffee, if ground and tamped the right amount, should stream out of the portafilter into the espresso cup much like honey dripping from a spoon.“
