„“After going through their selection criteria, we typically start providing them with sample roasts.” Ephraim explained the next part in the process his company goes through when a prospective client contacts them. “We have a roasting facility here in Chicago, so they would send us a quantity of their green coffee and we would roast it to their specifications, using a number of different roast profiles. After we return those samples to them, then they evaluate those samples on a blind testing basis, and then get back to us on the most desirable characteristics that they may have found based on the samples they received. At that point it becomes a matter of specifications, such as what is best for their needs in terms of capacities, what’s best for their needs in terms of control for the roasting process, what’s best for their needs in terms of fitting into their current facility.”“

„The target for roasting success is much narrower than with medium or moderately dark roasts. Plus, roasters need to be very disciplined about roast color, and gauge it either by cupping or by machine reading with an Agtron color reader. It is very, very difficult for the human eye to distinguish between beans brought to an M-Basic Agtron reading of 30 and those brought to a 18, even though the difference in how the two taste will be dramatic. Done right, the 30 has the potential to be roasty tasting but full-bodied, sweet and complex, whereas the 18 will end up a bit thin in body and anonymously burned in flavor no matter how well the roast is managed.“

„It also does fairly quick roasts, and is especially good for "brighter" coffees, as it brings out brightness, and tends to mellow body a bit. Viewing a roast is super easy - the roasting chamber is entirely visible. The HWP roasts using a patented air / fountain flow system, where beans are sent up from a central air vent area, hit a deflector plate, and are then sent off to the glass sides. The concave base of the roasting chamber eventually feeds these beans back to the middle, where the fountain process occurs again.“

„If you crack open one of our beans, more often than not you'll see that it's darker on the inside than it is on the outside. A lot of the time, others will roast coffee too quickly and it's darker on the outside than it is on the inside, resulting in a kind of a raw, unfinished flavor. The color of Peet's coffee, then, is dark, but incidental. As I like to say, we roast to taste, not color.“

„The taste of the coffee was excellent, but thinner and less flavorful than equal roasts done in a popcorn popper . The ideal person for this method would be someone that has no way of roasting outside with a popper, owns an electrical oven, and doesn't want to commit $130 to a Hearthware Precision Roaster . Someday I hope to try this in a gas oven with strong vents.“
