„Starbucks has also announced an agreement with Max Havelaar France to offer one Fair Trade certified coffee product in all of its stores in France. Max Havelaar is an independent international organization that grants its label to brands that adhere to international Fair Trade standards. The certification guarantees customers that these coffee products have been purchased at a fair price from producers.“

„Many improvements need to be made in the coffee market to make it a more equitable place for coffee producers. There is a lot of talk in the trade about trying to free Specialty Coffee --the top 5% of coffee grades and the quality of coffee that we deal with -- from the tyranny of the New York "C" market that determines the base trading price for even some of the fanciest coffees available. The "C" is intended for commercial grade coffees. (I keep a few novelty samples of these around the so people can see the atrocious quality that trades at those levels).“

„This assigning of national names to coffee roasts is a bit arbitrary, but has some basis in fact. French roasters, particularly those in parts of Northern France, do roast coffee very darkly, justifying the epithet French for the very darkest roast style. And, very generally, southern Europeans roast their coffee darker than northern Europeans. I will leave the question of whether darkness of roast correlates to the relative intensity of nocturnal habits among the various nations of coffee drinkers to those who may want to consider the issue over their second cup of dark-roast coffee.“
