In this millennium year we have declared that what separates our coffee from the pack is that we care.” Katzeff first started roasting coffee at his Thanksgiving Café in Aspen in 1969. He moved to California in 1972 to become a wholesale coffee roaster and then, in 1982, served as the first editor of the SCAA’s newsletter. He served as the SCAA’s president in 1984 and also helped establish its Environment Committee.“

„You won't get any "crema" (the elusive "head" on an espresso, like on a Guinness), and the flavoris different in part because a French press doesn't extract using pressure, so itdoesn't dissolve various coffee compounds. (Here, it seems like you're ingestingthem in solid form, instead!) Many varieties of coffee bean taste good in aFrench press; it's particularly good at making a seriously earthy cup of CentralAmerican coffee. One does far better with a French press than a cheap espressomaker, until one is able to splurge for a Pavoni or a serious pump machine.“

„Sustainability is the only way to sustain high quality. Now Fair Trade is NOT the only answer but the thought that because it is certified or fairly traded or shade grown that it is crappy coffee is ludicrous and wrong. it used to be that way but not any more.“
