Tea & Coffee 04/03 - BARISTA PRIMER I (#)
„When the grinding burrs are new, the coffee is finely cut, shaving the beans into very similar size particles. During the extraction process, the water hits the particles quite evenly. If the grinding burrs get dull, they will smash the coffee rather than cutting and shaving it.“

„Upfront I want to say that this grinder does a nice job of grinding coffee beans evenly - all the coffee comes out about the same "fineness" or "coarseness" depending on how you set it. This is a good thing, and if you have ever used the really basic coffee grinders, you know they can't do this.“

„When we say "lab", we really mean it - we're serious about the science. We've even got a machine to finely chop (not grind) the beans for our filter coffee. After, of course, the blades have been introduced to some liquid nitrogen at -180 degrees centigrade.“

„You need a machine capable of delivering water that is not too hot nor too cold, at the correct amount of pressure through a cake of good coffee that is finely, evenly ground and compressed. Steam-powered machines, like the ubiquitous Krups department store models from the '80s and early '90s are not going to cut it. You will need a pump or piston driven espresso machine. At one time that meant buying a hand-pull piston machine , which are still beautiful objects and can still make great espresso!“

„The SENSEO® coffee is not the same as an espresso. Espresso is a strong coffee brewed by quickly forcing hot water through darkly roasted, finely ground, coffee beans. SENSEO® coffee grounds are not as finely ground. The mode of filtration is also different and explains why the taste of SENSEO® is more like filtered coffee.“
