Tea & Coffee 04/01 - St. Helena: The Forgotten Coffee ()

„Helena coffee performs as an espresso. Most gourmet coffees do not lend themselves well to espresso and, as a consequence, most espresso coffee is a blend. St. Helena coffee, to the contrary, has received positive feedback from Italian roasters and cuppers extolling its performance as an espresso.“

The house blend actually seems something of a token to those who expect to find one, otherwise all the espressos are carefully chosen single origins from Costa Rica, Brazil, Colombia, Mexico, Java, Kenya (one of the Boot secrets, as they cherish it for its relatively light acidic quality), Ethiopia, Panama (from the Ruiz plantation), Haiti (caffeine-free) and an Indonesian Celebes Toraja Kalossi.“

Espresso Blending Espresso Blending

„Experiment with different roasts of each coffee in the blend in the same manner you experimented with adding other coffees to the Brazilian base.  Roast one coffee a little lighter or darker than the other coffees in the blend and note any differences.  It is usually preferred to roast each coffee separately to its own individual peak and then blend to create the most complexity.“
