„Costa Rican coffee is grown primarily in the countryside surrounding the capital, San Jose. Four of the most famous coffees by district are San Marcos de Tarrazu, Tres Rios, Heredia, and Alajuela. Altitude may be a more important factor in determining flavor than district; strictly hard bean indicates a Costa Rican coffee grown above 3,900 feet; good hard bean from 3,300 to 3,900. Unlike many coffees of the world, Costa Rican growths generally are identified either by the estate or farm (finca) on which they were grown, or by cooperative or processing facility (beneficio) where they were processed.“http://www.timeforcoffee.com/coffeetime/ country2.asp - Cached
„Costa Rica has set the standards for fine wet-processed coffee for the rest of Central and South America. The most famous coffees by region are Tarrazu, Tres Rios, Herediá, and Alajuela. Most Costa Rican coffee comes from a hybrid called caturra and is characterized as bright and full bodied. Other popular varieties are Mondo Novo and Catuai. The best coffees, which are grown above 3,900 feet, are designated as "strictly hard bean". The "good hard bean" classification is given to coffees grown from 3,300 to 3,900 feet.“http://www.coffeeresearch.org/coffee/ costarica.htm - Cached

„The mountains in Tarrazu are as jaggedly steep as the French Alps, but they are lush with greenery, much of which is coffee. In the heart of Tarrazu lies the Dota Cooperative. Dota is a group of nearly 700 small farmers who for more than 40 years have worked together to produce classic Tarrazu coffee, bursting with winey acidity, bold body and tangy milk chocolate flavor. One of the keys to the coffee's exemplary quality is that while individual farms are as small as an acre or two, the wet and dry milling of all the coffee happens at a state-of-the-art centralized milling facility owned cooperatively by all the farmers.“http://www.freshcup.com/feb02_costarica.htm - Cached

Virtual Coffee: Update on Roasting at Home

„We pulled out the stopwatches, thermometers, and cupping spoons, and ran four batches each through the two machines we had on hand. We used a Costa Rica Tarrazu SHB-EB coffee for all the tests, which is a good representative of specialty coffee, although it is demanding on a roaster because of its density. We also produced a roast from our laboratory sample roaster, an electric STA IMPIANTI fitted with one of Agtron's roast development controllers, to provide a basis of comparison. We alternated between the roasters' batch cycles to allow the machines to cool down between roasts.“http://www.virtualcoffee.com/update.html - Cached

„The coffees of central Costa Rica comprise one of those classic origins that is respected but not fawned over. Although Costa Rica produces a variety of coffees, those that reach American specialty coffee menus usually are very high-grown Strictly Hard Bean (SHB) coffees from regions near the capital of San Jose in the central part of the country: Tarrazu, Herediá, Tres Rios, Volcan Poas. At best Costa Rica coffees from these regions are distinctive in a way that defies simple, romantic description. When good they are clean, balanced, and resonantly powerful.“http://www.coffeereview.com/reference.cfm?id=53 - Cached

„The Right Roast for our Special Beans is Full City and Only Full City.) The second point of view is often expounded by small roasters in an effort to differentiate their products. Both can be disproved by roasting a good quality bean (Kenya AA or Costa Rica Tarrazu) at a variety of levels from light to dark and tasting the results. All the levels will taste different, but, to my tastebuds, they'll all be good in their own way. And blending a number of different roasts of a single coffee variety may add a complexity and balance which is otherwise lacking.“http://www.coffeegeek.com/opinions/alanfrew/ 07-15-2002 - Cached

„If you use Colombian, Costa Rican, Nicaraguan, or Kona as a base instead of Brazilian you add flavor, but lose some crema so you'd need to add more dry-processed beans like Sumatran or Ugandan. Then you can add some lighter flavored beans like Papua New Guinea, Costa Rican Tarrazu, Kenya AA or Ethiopian Yrgacheffe to balance the blend with lighter hints of flavor. They’ll taste great, but won't produce as much crema as the Brazilian-based drinks will. The Costa Rican Doka makes an especially good base among these choices because of its extra body.“http://www.coffeegeek.com/opinions/cafestage/ 02-03-2003 - Cached

„I've been mainly roasting my own, and as always, I'm seeking the perfect chocolate blend - for me that means Yemen in the blend, but Yemen has been tricky this year. The most recent blend I've built was about 25% Yemen, 25% Colombian Excelso, 10% Haitian Jacmel (don't look for it, it can't be bought right now), 10% Costa Rica Tarrazu (La Minita), 10% Ethiopian Harrar, and usually 5% of high quality robusta (I have a couple to choose from) then either some Sulawesi or Monsooned Malabar. It's been good as straight espresso, but weak otherwise.“http://www.coffeekid.com/cafetalk/03-18-2003 - Cached
„There are several coffees in my inventory that want to perform, and they deserve to be a part of The World's Best Cappuccino. One of them is a Costa Rica Tarrazu, which offers a marvelous range of bright notes and balance. Also playing first chair is an Altura Mexico, an outstanding contributor to the base section. My Brazilian coffees really want to play, but every time I give them a chance they skew the rhythm, so I'll just have them sit out for now.“http://www.virtualcoffee.com/sep_best.html - Cached

„He believes that coffees start to carbonize in second crack and become, in his view, attenuated. By dropping before second crack he avoids any hint of char, and highlights peak acidity, delicate aromatics, and the finer characteristics of a flavor profile, whether it be Antiguan, Andean, or Tarrazu. Howell also stresses the importance of airflow. The beginning of the roast is the time to dry out the beans in order to create pathways to the center; so, he likes a lot of air flow in the beginning of the process.“http://www.teaandcoffee.net/0402/special.htm - Cached

„Fortunately, the sheer mountainous terrain of what coffee lands are left makes for their own protection. The amazing Tarrazu plantations consist of a central valley completely surrounded by steep mountains - in the middle of the valley is one central hilltop which gives a panoramic view of the entire growing area. This, grinned one of the British roasters, guaranteed its safe future for coffee - it would be impossible for any developer to build a shopping mall in such a place!“http://www.teaandcoffee.net/0504/special.htm - Cached

„The only way you can get down around 1.25/lb green is if your using the lessor quality coffees from central america or others. Even if you're buying in larger quantities a good Costa Rican Tarrazu is around $1.60, a great Tarrazu is around $3/lb. Yemen's around $4, Kenya AA is around $2. My point is that you can't say somethings to high if you don't even know what it's made of.“http://www.coffeeforums.com/ viewtopic.php?p=2203 - Cached
