Sweet Maria's Coffee Cupping Reviews: Archive T-Z (#)
„The best coffees are branded Bugisu and come from the slopes of Mount Elgon in the Northeast along the Kenya border. It is a deep-toned coffee with syrupy body and intensely chocolatey taste. There's a unique wild note in the flavor that I would describe as leathery: I know that doesn't sound appetizing but it is really quite attractive if you like intense, wild coffees! I was told it could be used as a Java coffee in a Moka-Java blend, but it doesn't have that hint of sweetness in the low tones.“

„Onchere is intensely active in the field, shouldering the task of promoting Kenya’s coffees while concurrently protecting them, on both national and international levels. After spending almost 20 years based in London as the Overseas Representative of the Coffee Board of Kenya, Onchere is now back in Nairobi at the headquarters of the Coffee Board of Kenya, serving as deputy general manager. In London, he was the Coffee Attaché at the Kenya High Commission, and has been the London-based delegate of Kenya to the International Coffee Organization since 1983. Onchere has immersed himself in the coffee world, holding membership in many coffee associations.“

„You remember the anecdote regarding my “chocolate-caramel-cappuccino” friend and the Kenyan coffee he murdered with his sweet tooth? Kenya, pulled as a single-origin espresso, reminds me of eating chocolate truffles accompanied by some fine Italian red wine: a rich, fruity coffee balanced with every good aspect of sweet I could ever ask for. Experimenting with single-origin shots allows the barista to see the reasons why their blend tastes the way it does. You can explore all the realms: the base, the acidity, the body and the sweetness.“

„Sumatra is one of the world's most distinctive coffee origins. Full-bodied, resonant, low-toned and elegantly comfortable, it attracts coffee drinkers who find the powerfully acidy coffees of Kenya and Central America too high-pitched and softer coffees like Konas, Mexicos and Brazils too delicate. Sumatra's relaxed power doesn't depend on acidity, rather on depth, weight and echoing dimension.“

„From 1914 to 1931, Danish aristocrat Baroness Karen Blixen owned and operated a coffee plantation in Kenya. After the plantation failed, she returned to Europe and began to write under the pen name Isak Dinesen. Out of Africa reads like a collection of stories in which she adheres to no strict chronology, gives no explanation of the facts of her life, and apologizes for nothing.“
