The owner used an old La Pavoni manual lever machine and single origin Guatemalan beans of unknown provenance (he bought them from a food wholesaler on the mainland in Belize City). It proved to me that the person running the equipment, their level of skill and passion for a good cup are huge factors (he was a native of Milan Italy).“
