„A couple years ago I had cinsistently good cappuccino's at a tiny Italian restaurant on Caye Caulker (an island off the coast of Belize South America). The owner used an old La Pavoni manual lever machine and single origin Guatemalan beans of unknown provenance (he bought them from a food wholesaler on the mainland in Belize City). It proved to me that the person running the equipment, their level of skill and passion for a good cup are huge factors (he was a native of Milan Italy).“
