„when we first opened, precious few people in st louis knew how to work on an espresso machine, and all of them wanted to "take it back to the shop" for anywhere from a day to a few weeks. that was unacceptable, so i launched into our brasilia to see what was what. i had only the vaguest of notions about how the machine worked, but by taking my time (spending a lot of that studying the plumbing), i was able to take care of any problems which arose. when we had a simonelli, it wasn't performing the way i wanted and i was getting absolutely no help from simonelli (just the attitude that "no matter how it was working, that was the way it was supposed to work").“
