„Coarsely ground coffee is placed in the glass carafe, then water at the desired temperature is poured over the grounds and the top is placed on. When brewing is complete, the plunger (a mesh filter on a stick) is pressed down, pressing the grounds to the bottom and leaving the coffee liquor on top to be poured off. The filter is not as tight as a paper filter and because of the larger pores, a coarser grind is required so the grounds are filtered out, and the plunger does not become almost impossible to press down. The mesh of the filter allows the coffee oils and all those delicious dissolved and undissolved solids through without a problem.“

„The plunger method, said to have been invented in 1933, extracts the most flavour from the ground beans. The pot is warmed, coarsely ground coffee is placed in the bottom, hot water is added to the grounds and stirred, then it is allowed to steep for three to five minutes, before the plunger is pushed down to separate the coffee grounds from the coffee infusion. This method is only slightly less convenient than the filter method and is today one of the two fastest growing ways to make fresh ground coffee. Cheaper pot models have nylon rather than stainless steel mesh to separate the grounds from the infusion, but they do not last as long.“

„Using a chemex is fairly basic. Special circular or square filters are used to hold the coarsely ground coffee at the base of the neck, and heated water is poured over the grounds. The beaker can then be placed directly on a stove to keep the coffee warm. The coffee produced from this method can be quite good, and the filters prevent under extraction.“

„ The mixture will sit in the top for 30-60 seconds and then briskly filter to the bottom. I immediately pour the finished coffee into a previously warmed thermal Alfi carafe. Several caveats: the amount of coffee and the "right" grind will vary with each type and purveyor of coffee (it usually takes me a day or two to get it right if trying some new coffee). As a general rule, darker, oilier coffees will require coarser grinding, or the filter may clog.“
