These machines are being sold by some of the major bag suppliers, and although such sales may not be malicious, they actually do great harm to the roasted beans so packaged.” Sivetz, however, did not explain what this harm was before continuing, “Equal damage is incurred by other major bag manufacturers when they do not strongly recommend the attainment of the highest vacuums possible [lowest oxygen levels] in the use of their vacuum chamber style machines. It becomes the burden of the roaster/packager to learn what is right, as well as to know what kind of machines and at what performance levels he must be at. „If you don't beat 'em, buy 'em. Mike Sivetz (retired General Foods Chemist) made a huge contribution to demonstrate you can roast in small batches with hand made simple heating and ventilating parts that can make better coffee than his ex-employer General Foods, and he was right. Mike proved that fluidized roasting could make it so simple that anybody could learn to roast and roast great quality. „I'm not claiming that fluid bed is superior to drum roasting but I respectfully contend that it's not fair to disparage it until you leanr more about it. Sivetz is in fact the leading producer of small to mid sized commercial fluid bed roasters and it's worth learning about them and sampling a few coffees produced by an experienced roaster with a properly modified and controlled Sivetz. „I believe that the realities of the coffee business are that any of the machines in this survey are better than none. That’s pretty rough talk to some of the larger machine manufacturers, who refer to each other’s machines as toys, much less a sub $200 “corn popper.” Nevertheless, just as Sivetz coffee roasters are serious machines, so is each of the machines reviewed here. „Different strokes for different folks. My sincere desire is to develop some ways to truly control roast time and profile with the Sivetz and then get some experience under my belt with a commercial drum roaster. perhaps then I can make some valid A/B comparisons. „Roasting with a heat gun is another variation of the fluid bed method used in most home roasting appliances. I'm told a Sivetz sample roaster actually uses a heat gun to blow air up through beans held in a metal tube. The method I'm going to talk about is throw some beans into a bowl and blast them with a heat gun. „Both only roast around a lb at a time for around the same amount of time, and the savings is $500.00 a unit. If it was my decision I would either try to replicate on or buy the Sivetz. I wouldn't really trust something on a more commercial (steady all-day use) unless it was designed to do so. „From the 60's a working coffee roasterie and whole leaf teas walk-in/out back alley store. Our 1950 piston Gaggia and 1974 Sivetz roaster produce the best coffees. Don't expect fast service as the sign reads "We Specialize In Super Slow Service". „it is called Kopi Luwak. It is coffee cherries eaten by the Sivetz cat and then pooped out.
