„The other surviving schools of coffee making were the English Biggin and the French Press. Both fine, non pressurized brewing methods that survive today as the drip cone and of course the French Press. As they rely on a long saturation period without the use of pressure, extra acids are leeched into the brew, which attack the unstable aromatics flavor compounds and sort of erase them.“

„To brew coffee in a drip brewer place a thick paper filter in the brewing cone (basket) and wet thoroughly with water. This helps remove the paper taste from the filter. Then freshly grind the coffee using a medium grinder setting.“

„Once accustomed to enjoying coffee in the form of well prepared caffe espresso there is no going back to drip cones or the French Press. Longer brewing times and larger quantities of water tend to extract too much caffeine and bitterness from the coffee and hide its sweet flavors. Good espresso ends up being a more gentle way to worship the roasted coffee bean, something we like to do.“

„In filter and drip systems, avoid brewing less than the brewer's full capacity. If the pot is made to brew six cups, the coffee will taste better if you brew the full six.“

„This can be done via an electronic drip machine where the water is sprayed over the grounds, or manually poured over grounds in a cone-shaped filter. Some electronic models allow you to preset the coffee brewing mechanism so you can have you first wake-up cup as soon as you stumble out of bed. Although convenience and ease is certainly desirable, remember those coffee beans will have been ground for 7-8 hours exposed to air and so expect some flavor loss with this pre-set drip method. An additional note is the use of paper filters will absorb some of the flavor- producing oils from your coffee.“

„Ceramic #1 Coffee Cone Filter Holder. For those who dislike plastic, we offer a nice heavy ceramic coffee filter. I think you could probably drop this from your 2nd story window and not break it ...very heavy vitrified porcelain.“
