„They apparently spent a fair amount of time working with or conferring with Schomer, who had been working on this concept for quite some time (at least a few years). Even with Schomer mods a LM machine can have temp swings of as much as 2 degrees during the cycle of pulling a shot. „ The more one knows, the more complicated it becomes. Basically, Schomer is attempting to control all the variables that he can. This implies that the espresso machine and the grinder are able to constantly deliver the same quality shot after shot, if those variables are controlled. „ummm...maybe I am incorrect...Schomer...I saw him speak in Vegas...told people that if they where going to open shops then only open one...that they could not handle more than one...they would lose focus...then he started talking about how he opened his second location...he also spoke of how he tears down his group heads every 30 mins to clean them...sigh..I find that hard to believe. I was sitting next to a guy who had just started to roast. „Having tested the Italia out in Seattle last year, I concur with Nick, it is one excellent piece of machinery. Mark spent quite a bit of time with Schomer testing his machine and the stability is phenomenal. He said he can even get $bucks blend to taste good, at a surprisingly lower temperature--like 186 or something odd like that. „The alteration to Schomer's techniques are to use the plastic tamper built into the Moka 90 grinder (a tamper that requires an upward force on the portafilter) to compact the grind and create enough space so that about 24 grams can be held in the 3X basket. The exact amount of grind will depend upon the timing numbers that are generated with the pulled shot or pour. „It's a relatively new machien with manufatcure date of April 2001 but old enough that it does not have the welded on brew groups. If I understand correctly this means it can be "Schomer modified". Can someone here explain how this is done or point me to an information resource? David Schomer calls it a Northern Italian Roast. I call it medium/dark roast. „It's my understanding that La Marzocco is now offering a "superstar" version of the FB70 that has PID and also preheating for the brew boiler. When I visisted ESI in July for training they mentioned that they were working with Schomer on such a project but didn't mention availability or release date.
