Using the ABTS•+ method (the gold standard), it was confirmed that light roast or medium roast coffee has a significantly higher antioxidant activity in vitro than green coffee (8). This difference was observed despite a 19% and 45% decrease in the chlorogenic acid content of light and medium roast coffee respectively implying that other compounds make significant contributions to the total antioxidant activity of roasted coffee. Melanoidins are brown polymers formed by the Maillard reaction during the roasting of coffee beans and account for up to 25% of the dry matter.“

„Table Preparation: In a cupping session the table is usually set up with 6 to 10 cups per coffee.  These are fashioned in a triangular manner.  At the top of this triangle you should place a sample of the roasted coffee and a sample of the green coffee.  In the center of the table place a cup of room temperature water and an empty cup containing the cupping spoons. I heavily recommend covering both the green sample and roasted sample until the cupping session is over and the fragrance, aroma, and flavor profile have been documented. Espresso's water-to-coffee contact time is short, leaving some of the caffeine molecules locked into the plant fibers. A darker roast also tends to reduce caffeine content (this topic really gets people excited on the coffee newsgroups!) Fine Arabica coffees contain one half of the caffeine found naturally in the cheaper Robusta beans that are used in supermarket coffees. (Using Robustas in espresso blends is another controversy that tweaks the regulars around the newsgroups.)     The results of chemical analysis performed by Lauk's Testing Labs in Seattle were recently posted at the LucidCafe Web site by David Schomer.“
