„The "oil" on the surface of the beans is a sign of freshness. It's actually not oil, but starches in the beans that have been released by the dark roast. When coffee is stale, the beans appear dry because the oils have oxidized and dried. Lighter roast coffees do not release any oil on the surface of the beans.“
