„If it is only for a short time, as in espresso, the grind must be very fine. This will expose as much of the beans' surface area as possible, allowing the hot pressurized water to quickly pull the flavorful "oils" out of the grounds. In a method where the water and grounds will be in contact for a longer period of time, such as with a French Press, or percolator, a coarser grind is necessary because a fine grind will quickly release all the pleasant flavors, then release some of the more harsh and bitter woody elements.“

„peets was in serious financial need when the founders of starbucks (who learned from peet himself how to roast in the first place-and bought their beans before they started roasting theeir own beans) bought him out in the 80s. when starbucks got bought by schultz the founders took peets with them when they left. the founders gave schultz $100k in seed money and became their first investor for the starbucks you know today. technically starbucks success paid for peets expansion in the form of starbucks stock.“

„The flavor peaks a few days after roasting and diminishes over time, even in a sealed bag, and very quickly once exposed to air, light, and moisture. So the sooner you can enjoy your beans after roasting, the better your coffee will taste. „Being more labor-intensive, Swiss-water-process beans are generally more expensive. Peet's wisely carries both types of decaffeinated coffee. In either form, decaffeination certainly seems to work: it would take thirty cups of decaf coffee to equal one caffeinated cup. Where our Decaf Special is concerned, we find it woody in taste and nicely flavorful.“
