„Children who consumed high levels of atole, a nutritious food supplement rich in protein and energy, performed much better than those who had low consumption of atole. Low consumption of atole, meanwhile, was better than high consumption of fresco, a lower caloric drink without protein or other nutrients, and of course better than low consumption of fresco. This linear ordering held up across all tests. The investigators looked at all the hypotheses that might explain the differing impact on the tests and could find no explanation other than nutrition.“

However, the technology did not exist to fortify with both without driving out the iodine and/or affecting the color of the iron, the salt, and some of the foods it flavored… Fast forward to three decades later.
