About Naturally Decaffeinated

„Coffee is decaffeinated using a variety of processes. All of which are relatively harmless to your health, but harmful to the beverage quality. Almost all the methods of decaffeinating coffee consist of soaking the beans in water to dissolve the caffeine, extracting the caffeine with either a solvent or activated carbon, and then re-soaking the beans in the decaffeinated water to reabsorb the flavor compounds that were lost in the initial extraction. The solvents typically used are methylene chloride or ethyl acetate, which both have a low boiling point. Since ethyl acetate is found naturally in fruits you will hear people call this process "natural." In any case the solvent never comes in contact with the bean itself, but only the water solution containing the caffeine that was previously extracted from the bean. Therefore the process is relatively benign. All methods of decaffeination are based on equilibrium principles and solvent/solute properties. As such, neither all of the caffeine is removed from the coffee, nor are all of the flavor compounds returned or left in the coffee. The chemical composition of decaffeinated coffee is altered, and therefore the flavor and aroma are changed. “http://www.coffeeresearch.org/science/ decaffeination.htm - Cached

„On a final note, if you are looking for ways to reduce your caffeine intake without giving up coffee or sacrificing taste, there are a couple creative alternatives to decaffeinated coffee. Besides simply drinking less regular coffee, experiment with blending regular coffees naturally low in caffeine with a decaffeinated coffee to create your own favorite low-caffeine coffee. Try mixing one part of a distinctive, full-bodied regular arabica coffee such as Kenya, Yemen Mocha, Sumatra, or Guatemala with two parts of a mild decaffeinated coffee such as Costa Rican or Colombian. The resulting blend will have 80 to 85% less caffeine per cup than popular grocery store coffees and taste like a true specialty coffee.“http://www.coffeereview.com/articles/print/ 20.cfm - Cached

„Carbon dioxide is inexpensive to obtain and non-toxic. Like an Elvis song One might compare a naturally mellow (low acidity) cup of caffeinated coffee with a decaffeinated version of a high acidity coffee. If you prefer a coffee that is known for bitterness or acidity in the caffeinated version, the same coffee in a decaffeinated state will taste "flat" in comparison. At the same time, the other characteristics of that coffee will be brighter since they aren't masked by so much bitterness or acidity.“http://www.ineedcoffee.com/99/06/decaf/ - Cached

„Nevertheless, methylene chloride is accused of contributing to ozone destruction, and many of us prefer to avoid encouraging the use of solvents in any context, two good reasons to prefer non-solvent processes like Swiss Water. Ethyl acetate, the other solvent commonly used in decaffeination, apparently does not attack the ozone layer and is derived from fruit, which facts encourage some retailers to call coffee decaffeinated through its use "naturally" decaffeinated.“http://www.coffeereview.com/article.cfm?id=2 - Cached
