Tea & Coffee 07/04 - Pack, Wrap, Seal and Sell: Staying Current with Packaging Trends Tea & Coffee 07/04 - Pack, Wrap, Seal and Sell: Staying Current with Packaging Trends

„When Melitta coffee company first appeared on shelves, it was sold in cans, yet positioned as a premium, dark roasted coffee, using only Arabica beans. In the late 1970s and for most of the 1980s, when premium and specialty coffees were emerging in packages with optional ground or whole bean selections, Melitta’s point of differentiation was still in the can. One of the big issues raised by package proponents was that commercial coffee companies were canning stale coffee because after beans were roasted, they had to de-gas for a couple of days, thereby growing stale but preventing the cans from blowing up.“

„Monsoon Malabar is a unique coffee grown at 1,000 to 2,000 meters above sea level. It is a significantly larger arabica bean named for the region and its rainy season which contributes to the beans' higher moisture content. To create a "monsooned" crop, the green coffee is warehoused in an open structure protected from rain while moist tropical air blows through the storage area. In a 2 to 3 month period, the beans absorb moisture, losing a degree of natural acidity and at roast time, a richer yet mellower beverage results.“

Supermarket Coffee vs. Specialty Store Coffee Supermarket Coffee vs. Specialty Store Coffee

„Before I was an arabica whole bean convert, I once considered if these beans were worth the vast difference in price, which is as much as $3.00 to $7.00 more per pound than canned supermarket varieties. Surely the cost difference alone is enough to make one seriously reconsider any compelling reasons to switch to whole bean coffee. If you are a coffee lover, as I am, who savours the whole coffee making and drinking experience, then the answer is a resounding yes!“

illy carefully roasts its coffee to the optimum level to bring out all the flavors inherent in the bean. illycaffè purchases only Arabica beans for its blend and sorts the beans using electronic instruments which evaluate the color and automatically reject beans that are either too green or overripe. About 50 coffee beans are needed to produce one cup of espresso, and only one bad bean can ruin its flavor. In order to better balance the aroma, illycaffè prepares the blend from nine different lots of Arabica before roasting and uses an air cooling system versus the more common water cooling system.“
