„I, personally, do not throw these basics techniques by the wayside, however in a high volume shop (like, say, the one I work in) Grinding, dosing, and leveling for each individual shot is just not possible. We usually fill the doser with grounds prior to and during a rush (we use a Macap grinder with the level switch), but I try to stress to my employees as much as possible the importance of tamping. „doserless, and it was a consideration for me since my house isn't an especially high-volume operation. In fact, though, the doser is very convenient, and the MACAP sweeps it quite clean. I only grind as much as I'll use in a session (3-4 servings) and the doser works fine.
