It's All About Coffee (#)
„Home-brewed espresso used to represent gourmet coffee-making in its highest form. The perfect cup was as much about the ritual of grinding the beans and tamping the coffee just so as it was about the drink itself.“

„As automation is the surest route to simplicity, pushbutton machines dominate. Some machines automate the entire espresso process, from grinding the beans to dosing to tamping to brewing to discarding spent grounds. All this costs money, of course (electric home espresso machines run from around $130 to more than $2,000), but it is convenient, especially if you can adjust some of these steps to reflect personal taste. (Manufacturers also combine espresso machines with drip coffeemakers in a single home-brewing package.) Effectiveness--a measure of how much pressure a machine generates--and durability vary, but the surest guide, though not foolproof, is price.“

„Grinding your own beans is pretty simple, and will be worth the effort. Roasted whole bean will last 1 to 2 weeks, when stored at room temperature. You should keep it in an airtight container that blocks the light. Plastic or metal containers may contaminate the taste of your coffee, so try to use ceramic if possible.“

„Fresh coffee is essential to an excellent cup of coffee. Grinding coffee beans yourself has the advantage in that you grind only the required amount of coffee beans. For optimal, fresh aroma you can put together your preferred blend of favorite coffee beans.“

„If the coffee gushes out rather than dribbling, compensate by using a finer grind or by tamping the coffee more firmly. If it still gushes out, use a bit more coffee and, if you are grinding at home, increase the fineness of the grind. If the coffee oozes out rather than dribbling steadily, use a coarser grind or go easier on the tamping. With pump and piston machines the ideal 1-to-1 1/2-ounce serving of espresso should dribble out in about 15 to 25 seconds from the moment the first drop appears.“
